Traditionally, it is distilled from grain or potatoes, similar to vodka, but aquavit undergoes an additional infusion process to develop its signature flavors. Early versions of aquavit were crafted for medicinal purposes and were thought to promote health and digestion.
Over the centuries, aquavit became a cultural staple, served during festive gatherings, holidays, and traditional Nordic celebrations such as Christmas and Midsummer. Norwegian aquavit is often aged in oak casks, which gives it a golden hue, while Swedish and Danish varieties are typically unaged and clear. Meet the
Founders of Batch 22
Batch 22 was founded by three lifelong friends: Matthew, Marc, and Bruce. Their aquavit journey began in the 1970s when Matthew visited his father, actor Alan Arkin, on a film set in Eastern Europe and tasted a unique, unlabeled spirit that left a lasting impression. Decades later, during the COVID-19 pandemic, Matthew attempted to recreate that memorable flavor in his Los Angeles kitchen. After numerous experiments, he crafted a remarkably smooth and complex aquavit, which he shared with his buddy Marc and their entrepreneur friend Bruce.
The trio recognized the potential of this distinctive spirit and decided to take their passion for aquavit out to the world. Their collaborative efforts led to the creation of Batch 22 and their mission to establish American Aquavit as America’s next great spirit obsession..

For 35 years, Bruce has worked in one form of communications or another. He has started and managed publishing companies of all sizes, and has written and published numerous books and articles on the topics of food and beverages. As a graduate of The French Culinary Institute in New York City, Bruce brings his training and insights into the world of flavor to every project he works on.

As he was building his successful career as a television-film-and-Broadway actor, Matthew also had the opportunity to bartend in New York City, to practice as a lawyer, and to develop a talent for high-end mixology. He is currently an Adjunct Professor at Dodge College of Film and Media Arts at Chapman University in Orange, California, and teaches acting privately in Los Angeles.

A Newport Beach native, Marc is a tech-savvy real estate entrepreneur who brings many years of business experience to the team. Marc has spearheaded the R&D and focus-group testing for Batch 22, and has well-established connections in the world of Southern California bars, restaurants, and wine & spirits.

In a large glass with ice, add:
